AFTER OVER 100 YEARS OF GROWING APPLES.....

Fishkill Farms is proud to produce Treasury Cider. Treasury is an homage to our farm’s founder, Henry Morgenthau Jr., who, after a career in farming and conservation, served as Secretary of the Treasury under FDR.

But the concept has deeper roots. Orchards take time and care that can span generations. Through bumper crops and lean years, the orchard is an anchor in the life of the farmer. The variations in the seasons—the winter freezes, springtime rains, the summer droughts— they all have an impact on the crop. But each year’s passage brings renewed potential.

We set aside the most flavorful fruit in the fall to ferment into fine hard cider. Through the seasons and the years, a cider orchard is a source of comfort and vitality; the orchard is a treasury.
